If you wonder how the food is prepared for the feast, let us tell you that it is always a Christmas miracle! Each year is different but for 2018, we are truly blessed to have Chef Simon Bailey at the helm.
Chef Bailey originally hails from the U.K. and moved to Canada 20 years ago. After some time spent in London, ON and Vancouver, BC, the Bailey family are now settled in Collingwood with their 4 wonderful kids and 3 dogs. Over the years, Chef Bailey has had lots of great jobs from working on a cruise ship in Australia and private sailing boats in the south of France to ski gliding in the French Alps. Moving closer to home, he has served as a Chef at a local large hotel, a private golf course and a private ski club. He is now the Chef at the Meaford Army Base which is the biggest land-based training centre in Ontario where, during the summer months, they provide up to 3 thousand meals a day!
Our kind and generous friends at Men With Knives have donated the larder to chef Simon and our team of volunteers as the food preparation location which will then be moved to the curling club. Food has been so generously donated by our many sponsors as you can see on the website. This year, Mariana Knights is back with her artisanal buns!
A team of sweet elves bakes fresh apple crisp from scratch and Northwinds provides the delicious ice cream to top it off. Tim Hortons graciously provides tea and coffee.
This is just a tiny bit of insight to the team and process bringing the feast to reality this year under the guidance of our food chair, Darcy McLeod. Yum yum.Share this Post!
